Instant Pot Ribs

Ingredients:

  • 4lbs bone in short ribs, cut into chunks

  • 2t coconut oil

  • Salt and pepper

  • Garlic powder

  • Onion powder

  • Paprika

  • 1/3 cup tomato paste

  • 4 garlic cloves,  minced

  • 2T fish sauce

  • 2T coconut aminos (if you don't have these last 2 ingredients you can sub soy sauce)

  • 2t lime juice

  • 1/4 cup chicken broth 

  • 1/4 onion sliced and diced

Directions:

Season and rub the ribs with salt and pepper, garlic powder, onion powder and paprika.  Mix together tomato paste and the rest of the ingredients.  Set instant pot to sauté and add onions and oil.  Add the ribs in batches and sauté them for 30 seconds each side.  Turn pot off.  Add your mixture to cover the ribs and mix up the ribs so they are covered.  Turn pot to meat/stew for 50 min.  Close lid and seal vent.  After it finishes let it release the steam on its own for 25 min.  Open and serve with veggies.
