Sara's Salad

I often throw a salad together for lunch and use lots of different colorful ingredients! Check out this video or read below to see what kinds of things I use!

Ingredients:

  • Lettuce (be sure to chop it up!)

  • Protein - this can be any kind of leftovers that you may have: burgers, HB eggs, chicken, deli turkey, tenderloin, etc. I like to make extra protein over the weekend or when I make dinner in the evening so I have protein for my lunches!

  • Fruit - strawberries, apples, blueberries, etc.

  • Extra veggies - whatever you have! Could be leftover roasted vegetables from a dinner, sweet potatoes, squash, etc.

  • Roasted beets

  • Shredded carrots

  • Sprouts/cucumbers/red pepper

  • Artichokes/hearts of palm/garbanzo beans

  • Watermelon radishes

  • Goat cheese crumbles (fat)

  • Avocado (fat)

  • Marinated onions

  • Sliced almonds (or pumpkin seeds, sunflower seeds, etc.)

  • Hummus

Dressing:

  • 1 Tbls stone ground mustard

  • 1/3 cup oil (I like Trader Joe’s garlic olive oil)

  • 1/8 cup balsamic vinegar

  • Seasonings: salt, pepper, Italian seasoning, etc.

Whisk together well until thickened.

Plate all your ingredients, pour on the dressing and Enjoy!
