Sara's Lasagna

Ingredients:

  • 1 pkg lasagna noodles (I use GF)

  • 32 oz marinara (organic if possible)

  • 2 small zucchini

  • 2 cloves garlic, minced

  • 1 lb ground turkey

  • 1 lb ground beef or bison

  • 1.5 cup cashews, soaked for 2 hours in water

  • Shredded mozzarella cheese (optional or use DF)

Directions:

Preheat oven to 350. Brown meat in skillet. Boil noodles and drain. Dice zucchini. Add zucchini and garlic to blender or food processor with 1/4 cup water. Purée. Add sauce and zucchini purée to meat. Simmer for 5 min. Drain cashews. In blender, purée cashews. In 9x13 baking dish layer meat sauce, noodles, cashew ricotta, repeat until gone. Add cheese on top if you wish! For dairy free, use DF cheese or omit! Bake for 20 min or until cheese melts. Enjoy!
