Key Lime Pie

Ingredients:

  • 1 pie crust

  • 1/2 cup of water

  • 1 Tbsp gelatin

  • 3/4 cup full fat coconut milk

  • 1/2 cup fresh lime juice

  • 1/4 cup of honey

  • 1/2 cup spinach

  • pinch of salt

Directions:

  1. Bake pie crust at 325 for 20 minutes.

  2. Boil water (according to package) and pour into a mug and stir in gelatin

  3. Pour gelatin, coconut milk, lime juice, honey, spinach and salt into a blender and purée

  4. Pour filling into crust and refrigerate for 2 hours.

  5. When set, top with whipped cream and refrigerate overnight.

Whipped Cream:

Refrigerate 2 cans of full fat coconut milk overnight. Discard water and keep cream. Mix cream, 1/4 cup of honey, and 1 tsp vanilla with a mixer. If the whipped cream needs to be thicker, boil 2 Tbsp of water and 1 tsp of gelatin and add to the mixture.
