Key Lime Pie
Ingredients:
1 pie crust
1/2 cup of water
1 Tbsp gelatin
3/4 cup full fat coconut milk
1/2 cup fresh lime juice
1/4 cup of honey
1/2 cup spinach
pinch of salt
Directions:
Bake pie crust at 325 for 20 minutes.
Boil water (according to package) and pour into a mug and stir in gelatin
Pour gelatin, coconut milk, lime juice, honey, spinach and salt into a blender and purée
Pour filling into crust and refrigerate for 2 hours.
When set, top with whipped cream and refrigerate overnight.
Whipped Cream:
Refrigerate 2 cans of full fat coconut milk overnight. Discard water and keep cream. Mix cream, 1/4 cup of honey, and 1 tsp vanilla with a mixer. If the whipped cream needs to be thicker, boil 2 Tbsp of water and 1 tsp of gelatin and add to the mixture.
