Italian Zoodle Salad
Ingredients:
Salad:
3 large zuchinni, spirilized
1/2 red onion, sliced
Cherry tomatoes
1/2 cup fresh basil, chopped
1 avocado
1 can Artichoke hearts (optional)
Dressing:
1/2 cup olive oil
1/2 cup apple cider vinegar
1/2t honey
1t stoke ground or Dijon mustard
1/4t basil
1/4t marjoram
1t oregano
1t garlic powder
1t onion powder
Salt
Pepper
Directions:
Mix all dressing ingredients together with a whisk. Pour over zoodles. Add basil and artichoke and mix. Place remaining ingredients on top and serve!
*You can make dressing and zoodles ahead of time and store in refrigerator, so easy!
