Italian Zoodle Salad

  • 3 large zuchinni, spirilized

  • 1/2 red onion, sliced

  • Cherry tomatoes

  • 1/2 cup fresh basil, chopped

  • 1 avocado

  • 1 can Artichoke hearts (optional)

Dressing:

  • 1/2 cup olive oil

  • 1/2 cup apple cider vinegar

  • 1/2t honey

  • 1t stoke ground or Dijon mustard

  • 1/4t basil

  • 1/4t marjoram

  • 1t oregano

  • 1t garlic powder

  • 1t onion powder

  • Salt

  • Pepper


Directions:

Mix all dressing ingredients together with a whisk. Pour over zoodles. Add basil and artichoke and mix. Place remaining ingredients on top and serve!

*You can make dressing and zoodles ahead of time and store in refrigerator, so easy!
