1lb ground chicken or turkey
Egg Roll in a Bowl
1 large zucchini, shredded
1 cup shredded carrots
1 cup cooked rice
1 cup cooked cauli rice
¼ cup black beans
15 baby Bella mushrooms, sliced
1 small onion, diced
4 garlic cloves, minced
2 inch piece of fresh ginger, peeled and grated 2 T coconut aminos (soy sauce sub)
1T sesame oil
Ginger (ground)
Salt
Green onion and sesame seeds (optional garnish)
Cook ground turkey in skillet, season with ginger and salt. In another skillet, heat sesame oil. Add mushrooms, carrots and onion. Cook until onions & carrots are translucent. Addall other ingredients.. Cook about 10 min. Add coconut aminos. Season with salt. Mix in turkey. Add garnish and enjoy
