Chicken Piccata

I’ve got you covered for dinner tonight! Try this easy chicken piccata!

Ingredients:

  • 2lbs chicken breast cutlets

  • 1/2 cup arrowroot flour

  • Salt, pepper, garlic powder

  • 1 lemon

  • 1/4 cup capers

  • 1 cup chicken broth

  • Oil

  • Butter or ghee

  • Garlic cloves (3-4), minced

Directions:

Heat oil in a skillet. Dredge chicken in arrowroot, then season with salt, pepper, garlic powder. Add to skillet. Cook 3-4 min each side until browned. Remove and place on parchment paper. Add butter to skillet, add garlic. Cook for 1 min. Add capers, broth, juice of the lemon. Place cutlets back into the skillet. Cook on low heat until liquid thickens (about 15 min). Enjoy!
