Chicken Nuggets
Kid-approved . This recipe is a spin off of the Defined Dish cookbook which I highly recommend!! In my health journey it’s super important to me that I feed my kids healthy options (lord knows there are plenty of unhealthy options when they aren’t home ), but that it’s also something they will enjoy.
Ingredients:
1 lb chicken tenderloins
2 cups pickle juice
2 eggs
1/2 cup arrowroot flour
1/2 cup almond flour
1 T coffee bbq seasoning (or other fav seasoning)
1t garlic powder
1/8 t salt
1/8 t pepper
Oil for frying
Tessamae’s honey mustard sauce (optional)
Directions:
Cut chicken into strips or bite sized pieces. Place chicken in shallow bowl and cover with pickle juice. Refrigerate for 2 hours. Drain pickle juice. Whisk eggs in shallow bowl. Add flours and seasonings in separate bowl and mix well. Heat oil in skillet. Dredge chicken piece by piece in egg, then flour mixture, place in skillet. Cook for 5 min on med low heat. Flip over and cook until done. Serve with honey mustard dipping sauce (or ketchup for the kids).
